Cheese boards

I made myself two cheese boards out of poplar. They are about 11x11" and are used for sandwiching a cheese to make it easier to flip repeatedly during the drying phase.
When using these boards, you have to have a mat between the cheese and the board. This matt will allow air to circulate. Cheesemakers often use sushi mats for this purpose, but I am following a hint I read and using plastic needlepoint canvas instead -- dishwasher safe and only 24 cents!
