The B.C. and A.D. Eras

My time as a cheese maker was split into two eras on March 26, 2007, when I fully grasped the differences milk pasteurization can make to the cheesemaking process. I have named these two eras as follows:

B.C. ("Before Cheese")

This represents all time before March 26, when I first made "real" cheese with non-UP milk. I call this "Before Cheese" because anything I made during this era wasn't really cheese at all.

A.D. ("After Discovery")

This represents all time after March 26, the day that I discovered the problem with my previous attempts. Now that I am using proper milk, I expect vastly different results.
